*So, when I was in Dillons last week I went to the deli counter…the one with the cheese, olives, hummus and amazing salads. I sampled a “seven grain salad”….and said “oh my!” The deli man was kind enough to give me the ingredients and off I went to purchase what I needed. I found a recipe online and came up with a salad pretty close to what I had sampled.
*Trying this salad led to my adventure of week 13: exploring mideastern cooking. Besides the salad, I made Lebanese Chicken and Moroccan Chicken. Next on the list is Tava (a Turkish stew) and Challah. You can find these recipes on allrecipes.com. If you happen to have a great mideastern recipe, please share. J
terry, jeff is half english, half lebanese, so I make a family favorite of spinach pies....would you like that recipe?
ReplyDeleteI would LOVE that Melinda! Thanks!
ReplyDelete1 large bag of washed spinach (not baby spinach)
ReplyDeleterip up the leaves into a large bowl
juice from 2-3 lemons
approx 1/4 cup good olive oil
1 chopped onion (I like Vidalia)
a handful of pigniola nuts (approx 1/4 cup)
1 tbl sea salt
pizza dough(I buy a large size from our local pizza shop)
roll out the dough in large circle
cut triangles, approx 4 inches across bottom
place spoonfuls of spinach mixture in center of triangles and fold over
and pinch the sides
brush olive oil on top, add a pinch a fine sea salt on top
cook at 400 or 450 for 8-10 minutes, until nicely browned on top
I then lay them on a paper bag to cool a little
Yum! makes me hungry just thinking about them!
Wow...thanks Melinda! They sound delicious. I've never used pigniola nuts. :)
